Light (blond): bright acidity, fruity notes, higher caffeine content. Medium : balanced, caramel/chocolate notes, best for espresso. Dark (Italian): full body, bitterness, intense crema, cocoa notes.
Coffee loses 60% of its aroma within 15 minutes of grinding. With whole beans, your machine or grinder extracts the grounds just before espresso— optimal aroma and maximum crema. Grind settings: fine for espresso, medium for filter.
An opened package of whole bean coffee will keep for 2 to 3 weeks in its resealable packaging or an airtight container, away from light and heat. Do not refrigerate (humidity degrades the oils). Do not freeze.
