The current company was born in 1991 from the merger of two rival Genoese houses: Coveca, founded in 1969 by Osvaldo Picci with Adone Macoggi and Paolo Guglielmoni, and Compagnia Mediterranea Caffè, founded in 1974 by Federico Solari — a descendant of the Federico Solari who launched the Società Internazionale per la Torrefazione Igienica del Caffè in Genoa at the beginning of the 20th century.

The sales and administrative headquarters are in Genoa (Via G. Adamoli 241), and the main production site is located in Tribogna (province of Genoa, Liguria), covering nearly 9,000 m². A family-owned business with five shareholder families, Covim has established itself as the Italian leader in portioned and vending coffee, with a strong presence in the HoReCa (hotels, restaurants, cafés) and supermarket sectors. The ESE 44 mm (Easy Serving Espresso) pod is an open Italian standard for compressed paper pods, patented by illy in 1998 and released as a multi-brand standard. Universal format: 44 mm in diameter, 7 g of pre-measured coffee.
