Traditional methods include water( Swiss Water Process), CO2_, supercritical or selective solvents (methylene chloride, ethyl acetate)—each with its advantages (aromatic preservation) and limitations (cost, time). Delta does not publicly disclose the exact process for Deqafeinatus. What matters in the cup: the coffee retains the chocolate notes and body of the original coffee, with a residual caffeine content of less than 0.1%, compliant with European regulations.
