The Swiss Water Process (also called the water method or natural method) is a decaffeination process without chemical solvents :

1. The green beans (before roasting) are soaked inhot water to dissolve the caffeine and aromatic compounds.
2. The water passes through an activated carbon filter which captures only caffeine (large molecule), allowing the aromas to pass through.
3. The beans are re-immersed in this water saturated with aromas but devoid of caffeine — they reabsorb the aromas without re-consuming the caffeine.

Advantages vs chemical methods (dichloromethane, ethyl acetate): superior preservation of aromas, absence of chemical residues, natural process certifiable as organic.

< 0.1% residual caffeine — in accordance with the EU standard for decaffeinated coffee (European regulation requiring ≤ 0.1% caffeine to be labeled "decaffeinated"). In practice, DEQAFEINATUS N°7 typically contains 0.04-0.08% caffeine, or ~2-4 mg per 30 mL cup, compared to 60-80 mg in a regular espresso. Therefore, consuming 10 DEQAFEINATUS espressos is equivalent to less than one caffeinated espresso.
