The Iperespresso Pro capsule is physically different from the Home capsule: dimensions, filter shape, mechanical resistance. It's a dedicated professional capsule format that allows illy to optimize:

• Intensive resistance — high-traffic office/Ho.Re.Ca use (100+ coffees/day).
• Faster machine cycle — Pro extraction optimized for simultaneous service.
• Increased coffee yield — adjusted dose pro format (7 g/capsule).

The Home capsule remains optimal for home use (3-8 espressos/day). The Pro capsule becomes economical once you exceed approximately 20 coffees/day and requires a professional machine.

The Iperespresso system is an illy proprietary technology patented in 2007 (5 patents filed at the illy Research & Innovation laboratory in Trieste). Unlike the traditional system where the coffee is extracted all at once by percolation, the Iperespresso capsule extracts the coffee in 2 distinct phases :

1. Infusion — hot water under pressure is injected into the sealed capsule. The coffee is pre-infused in a closed environment at uniform pressure. No extraction occurs at this stage thanks to a patented septum.
2. Emulsification — when the pressure reaches the threshold value, the septum opens and the coffee is forced through a small, calibrated orifice. This forced passage under pressure generates the dense and persistent crema characteristic of Iperespresso.

Advantages: preserved aromas (gentler extraction), exceptional crema, coffee that never touches the machine (no oxidation or cross-contamination). The technology has inspired many competitors but remains protected by illy patents.

The signature illy Classico recipe, formulated by Francesco Illy in the 1930s and refined by his son Ernesto Illy in the 1980s, is based on a balanced blend of nine single-farm Arabica origins —individually selected and cupped by the illy tasting committee in Trieste. Typical compositions:

• South America — Brazil (neutral and sweet base), Colombia (lively acidity), Guatemala (chocolate notes), Costa Rica (finesse).
• Central America — El Salvador (roundness).
• Africa — Ethiopia (floral notes), Kenya (bright acidity), Uganda (body).
• Asia — India (spicy touches, body).

No Robusta. The result: less full-bodied coffee (Robusta provides body and a dense crema), but more aromatic finesse and complexity (Arabica contributes chocolate, caramel, and floral notes). This is the stylistic choice of the Triestine school— refinement rather than raw power.

30 mL espresso program on your Iperespresso Pro machine — the 7 g capsule dose is calibrated for this volume. Extraction ~25 seconds, machine temperature 92 °C, pressure optimized by the Iperespresso system.

Cappuccino/latte macchiato — the aromatic finesse of the Classico blend delicately infuses the milk. On an X9 or X7.1 Pro machine with integrated steam wand, prepare a velvety 65°C frothed milk, then pour it over the espresso for a cappuccino with milk chocolate/caramel notes.

Ristretto (20 mL) — a personalized short program to concentrate the aromas. Ideal for the end of a meal in a restaurant/hotel.

Long coffee — for a lungo/café-crème, opt for the illy Iperespresso Pro Classico Lungo capsule optimized for extraction 80-100 mL.

Polypropylene (PP) plastic capsules — recyclable in the yellow recycling stream after emptying the coffee grounds. The grounds can be composted separately (excellent activator, rich in nitrogen and minerals).

illy Return Program — some illy stores and professional retailers accept used Iperespresso capsules for centralized recycling. Check with your illy retailer for details.
