illy Iperespresso Decaf uses the exact same blend as the Classico caffeinated version: 9 single-farm Arabica origins (Brazil, Ethiopia, Guatemala, Colombia, Costa Rica, El Salvador, India, Kenya, Uganda), medium balanced Triestine. The only difference is the water decaffeination process (Swiss Water Process) applied to the green beans before roasting.
Swiss Water Process (SWP) : a 100% natural decaffeination method without chemical solvents, developed in Canada and certified by l'orindependent organization Swiss Water Decaf Coffee Company. The green beans are soaked in pure water filtered through activated carbon; the caffeine (water-soluble) migrates into the liquid, while the aromatic compounds (poorly soluble in water alone) are largely preserved. The result: a decaffeinated coffee that retains approximately 99.9% of its aromatic profile —a recognized technical feat.
In the cup (30 mL Iperespresso) : a balanced and well-rounded espresso with a dense, hazelnut-colored crema and signature notes of milk chocolate, blond caramel, delicate white flowers, and hints of toasted nuts . Discerning connoisseurs note a very slight difference in length on the palate compared to the caffeinated Classico (caffeine contributes to the aromatic persistence), but the aroma is indistinguishable in a blind tasting for 90% of palates . Ideal as a digestif espresso after a meal, for a late afternoon break, or in the evening without the risk of disrupting sleep.

How does the "Swiss Water" decaffeination process work?
The Swiss Water Process (SWP) — 100% natural without chemical solvents — takes place in 4 stages:
- Soaking — the green beans are soaked in pure water. The caffeine (water-soluble) migrates into the liquid.
- Activated carbon filtration — the water is filtered through a bed of charcoal which captures caffeine and allows aromatic compounds to pass through.
- Rehydration — the filtered water (full of aromas but without caffeine) is reinjected onto a new batch of green beans which then lose only their caffeine.
- Drying and roasting — decaffeinated beans dried then roasted according to the illy Classico recipe.
Result: Decaffeinated with <0.1% residual caffeine (European standard for the "decaffeinated" designation) with ~99.9% of the aromas preserved. Certified Swiss Water Process (SWP) by l'orindependent Canadian organization. This is the gold standard — used by premium roasters (illy, Starbucks Reserve, Blue Bottle).
Taste difference compared to the caffeinated Classico?
Very subtle, undetectable to 90% of palates in a blind tasting. Trained palates (baristas, café sommeliers) may notice:
- Slightly less length on the palate — caffeine contributes to the aromatic persistence and the slightly stimulating sensation at the end of the mouth.
- Slightly sweeter — the characteristic bitterness of caffeine disappears, leaving more room for sweet notes (caramel, milk chocolate, white flowers).
- The body is very slightly less full — imperceptible on a strong espresso.
The aromatic quality is preserved thanks to the Swiss Water Process which protects the aromatic compounds (major difference vs chemical solvent methods CH₂Cl₂ or EtOAc which alter the profile).

Is it safe to drink decaf in the evening without risking sleep disturbances?
Yes, it poses no significant risk to the vast majority of adults. Illy decaffeinated coffee contains less than 0.1% residual caffeine (the European standard for the "decaffeinated" label) — that's about 1 to 3 mg of caffeine per cup , compared to 60-80 mg for a regular caffeinated espresso and 95-200 mg for a filter coffee. At this dose, there is no significant stimulant effect on l'oradult body.
Special cases:
- People who are hypersensitive to caffeine (approximately 2-3% of the population) may experience a very slight effect even at 3 mg. In this case, rooibos tea or herbal tea is preferable.
- Pregnant/breastfeeding women — decaf remains largely compatible (WHO recommends < 200 mg caffeine/day during pregnancy; one cup of decaf = ~1% of this limit).
- Drug treatments — check with your doctor if you are taking psychotropic or stimulant medication.
Preparation recommendations?
30 mL espresso program on your Iperespresso Home machine — the 6.7 g capsule dose is calibrated for this volume. Extraction ~25 seconds, machine temperature 92 °C. The Iperespresso 2-phase system (infusion + emulsification, patents 2007) generates a characteristic dense and persistent crema.
Decaf cappuccino/latte macchiato — ideal for evenings. On an X7.1 or Y5 machine with integrated steam wand, prepare frothed milk at 65°C with a velvety texture, then pour it over the decaf espresso. The Classico blend gently infuses the milk, amplifying the milk chocolate/caramel notes.
Digestive espresso at the end of a meal — the best use of decaf. The smoothness of the Classico blend + the absence of caffeine stimulation make this decaf an excellent after-dinner digestif without compromising sleepiness.
Recycling of polypropylene capsules?
Polypropylene (PP) plastic capsules — recyclable in the yellow recycling stream after emptying the coffee grounds. The grounds can be composted separately (excellent activator, rich in nitrogen).
