Italian espresso format — traditional Italian espresso is served in a 60-70 mL with an extraction of 25-35 mL, leaving crema and steam. The saucer is approximately 11-12 cm in diameter — standard Italian bar size.

Why 70 mL for an espresso?
Traditional Italian espresso is served in a 60-70 mL with an extraction of 25-35 mL (approximately 50-60% of the cup's usable volume). This margin is essential for:
- Preserve the crema — the golden foam on top of the espresso doesn't spread if the cup has some room.
- Leave space for the steam — the espresso reaches ~70°C, the steam rises without overflowing.
- Allow the addition of sugar — the 4g sugar stick can be stirred without risk of overflow.
- Standard Italian bar — all of Italy uses the 60-70 mL format for espresso.
A larger cup (100+ mL) would visually dilute the espresso and break down the crema. A smaller cup (< 50 mL) would easily overflow.
Useful or decorative?
Both are essential — the saucer is functional (hygiene, spoon/sugar holder, server assistance, branding). No professional espresso service in a bar, hotel, or restaurant is complete without a saucer — it's a marker of service quality.
Compatible with other non-Lavazza espresso cups?
Not recommended — the nesting curve is sized for 70 mL Lavazza cups. A cup from another manufacturer (illy, WMF, Bialetti, etc.) may move or not nest properly. Use the matching saucers from each manufacturer.
Maintenance and lifespan?
Dishwasher safe — premium porcelain withstands standard cycles (60-70°C). Avoid very high temperature cycles (>75°C) which can dull the enamel. scratch resistance of metal cutlery compared to entry-level porcelain thanks to Lavazza premium enamel. Lifespan : ~5-8 years in intensive bar/café use, ~15-20 years in home use.
