Why 4g per log?

It corresponds to the ideal dosage for a 25-35ml espresso or a 60-80ml lungo : enough to sweeten without masking the coffee's aromas. For a 160ml cappuccino or a 240ml latte , most consumers use 1-2 cubes.
Alternative format: some countries (Germany, Austria) use 5g ; Italy mainly uses 5g bar but 4g has become the standard in France since the 1980s.
Yield/turnover of a 700 gearbox in an office or bar setting?
Typical rotation depending on usage:
- French neighbourhood bar (80-150 coffees/day) — consumption ~30-50 logs/day (30-50% of customers sweeten) = ~2-3 months per box of 700.
- Restaurant / brasserie (150-300 coffees/day, including dessert) — ~50-80 logs/day = ~1.5-2 months per box.

Compatible with all brands of coffee?
Technically yes —sugar is a neutral, universal ingredient. However, the Lavazza branding printed on the paper is a choice specific to Lavazza-affiliated establishments (Lavazza-branded bars/cafés/hotels, respecting the brand's visual identity in the dining area). For neutral branding, opt for Saint Louis Sugar x600 (a historic French brand dating back to 1867, printed on premium neutral paper).
Storage and best before date?
Long shelf life (~18 months ) — sugar being a stable product (dehydrated, non-perishable), the shelf life is very long:
- Protect from moisture — place the box in a dry location (room temperature 15-25°C, relative humidity < 65%). Moisture can cause the sugar sticks (fusing together).
- Closed box — reseal after each use to avoid dust and ambient humidity.
- Avoid proximity to odorous products (coffee, spices, household products) — the paper could absorb the odors.
A well-preserved log can still be used well beyond its best-before date, but may slightly change color with age (yellowing of paper without altering taste).
