The coffee and chocolate form a gourmet and elegant pairing that turns simple cookies into a pleasure break full of character. This cookies coffee & chocolate chip recipe, both simple and generous, allows you to obtain soft‑centered cookies that are slightly crisp on the edges, where the coffee subtly intensifies the chocolate flavor. Perfect for accompanying a coffee or a convivial moment, they charm as much fresh out of the oven as they do a few days later thanks to their texture and irresistible aroma
Why add coffee to cookies ?
Coffee n’est not only a drink : it’s also an excellent ingredient in cooking. In desserts, it has the particularity of enhancing chocolate flavours without necessarily dominating. Well measured, it does not take up all the space. It acts rather as a flavor enhancer.
In this recipe, we use instant coffee or a coffee extract to flavor the dough evenly. The result is balanced: the cookie retains its classic indulgence, but with a deeper, more elegant, almost lightly roasted note. It’s this little twist that changes everything.
Ingredients for about 12 to 15 cookies
To make this recipe, you will need:
- 120 g of soft butter
- 100 g of brown sugar
- 50 g of white sugar
- 1 egg
- 1 cuillère à tablespoon of soluble coffee
- 1 tablespoon d’hot water
- 220 g of flour
- 1/2 teaspoon of baking powder
- 1/2 teaspoon of baking soda
- 1 pinch of salt
- 150 g of dark chocolate chips
- 50 g of dark chocolate broken into pieces, optional but very indulgent
- 1 teaspoon of vanilla extract
Step 1: prepare the coffee flavor
Start by dissolving the instant coffee in a tablespoon of hot d’water. Mix well until ’you obtain a smooth and grain‑free preparation. Let it warm for a few minutes.
This step is important, as it allows you to ’incorporate the coffee uniformly into the dough. If you add the instant coffee directly into the mixture, the flavor may be less evenly distributed. By dissolving it first ’, you obtain a more homogeneous and pleasant flavor.
If you prefer, you can replace instant coffee with a coffee extract or a very reduced, highly concentrated espresso. In this case, make sure not to over‑liquefy the dough.
Step 2: work the butter and sugars
In a large mixing bowl, place the softened butter, brown sugar and white sugar. Whisk everything until you’re able to obtain a creamy, smooth and slightly airy texture.
The brown sugar adds softness, a light caramelized note and a beautiful golden color during baking. The white sugar, on the other hand, helps achieve slightly crispier edges. L’balance between the two is ideal for cookies well-textured.
Take the time to properly cream this mixture: c’is an essential base to achieve beautiful cookies.
Step 3: incorporate l’egg, the vanilla and the coffee
Add then the ’egg, ’vanilla extract and the dissolved coffee. Mix until ’to obtain a homogeneous preparation.
At this stage, the dough becomes more supple and already takes on a delicious aroma. The vanilla rounds out the coffee and the chocolate, while the ’egg provides the necessary binding to the dough.
Make sure not to overbeat the mixture once the ’egg is incorporated. Mixing just what is needed allows the cookies to stay softer after baking.
Step 4: add the dry ingredients
In another container, mix the flour, baking powder, baking soda and a pinch of salt. Then pour this dry mixture into the wet preparation, and mix with a spatula or a wooden spoon.
You shouldn't overwork the dough. As soon as the flour is incorporated, stop mixing. An overworked dough can produce cookies that are denser and less melt-in-your-mouth.
Baking soda helps achieve a beautiful texture, slightly spread and tender. Yeast, on the other hand, adds a bit of lightness. Salt is subtle, but it plays a valuable role: it highlights both chocolate and coffee.
Step 5: add chocolate chips
Incorporate dark chocolate chips, then, if you wish, some roughly crushed chocolate pieces. This double texture works very well: the chips ensure an even distribution, while the pieces melt in places and create very indulgent zones.
You can also adapt the recipe to your taste. Milk chocolate will give a milder result, while ’a robust dark chocolate will accentuate the coffee's character. For an even more intense version, choose a chocolate with 60 or 70% cocoa.
Step 6: let the dough rest
Cover the dough and place it in the refrigerator for 30 minutes to 1 hour.
This resting time is highly recommended. It allows the butter to firm up, the aromas to develop, and the dough to hold together better during baking. Result: your cookies won’t spread as much, will have a nicer thickness and will gain in flavor.
If you are in a hurry, you can bake the dough immediately, but the rest provides a real advantage.
Step 7: shape the cookies

Preheat your oven to 180°C, fan heat if possible. Cover a baking sheet with parchment paper.
Scoop portions of dough ’ a ’ ice-cream scoop or two spoons. Form balls of similar size, then place them on the tray spacing them well. No need to flatten them too much: they will ’ spread naturally during baking.
For an even more indulgent result, you can add a few chocolate chips on top of each ball just before you’re baking.
Step 8: bake the cookies
Bake for 10 to 12 minutes, depending on the size of the cookies and your oven. The edges should be lightly golden, while the centre should still appear a bit tender.
It’s the secret of cookies soft: not to overcook them. They will continue to firm up slightly as they cool on the tray. If you wait for them to be completely cooked in the center in the oven, they may become drier once cooled.
Let them rest for 5 minutes on the tray before transferring them to a rack.
Step 9: taste and store
These cookies coffee & chocolate chips are deliciously warm, when the chocolate is still melting and the aromas are well present. They are especially enjoyed with a cup of coffee, of course, but also with hot chocolate or a plant-based drink.
To keep them, place them in an airtight container at room temperature. They will stay tasty for 3 to 4 days. You can also freeze the raw dough balls and bake them as needed, to have fresh cookies as soon as the craving arises.
Our tips to succeed with this recipe
For optimal results, use a butter that is soft but not melted. Also respect the resting time if possible, as it improves both texture and stability. Finally, choose a quality coffee, even for a pastry recipe: a good coffee will always make a difference in the final taste.
