Coffee and vanilla form a particularly harmonious aromatic duo. Coffee adds depth, a slight bitterness, and roasted notes, while vanilla rounds out the ensemble with its warm, enveloping sweetness. In a marble cake, this opposition creates a visual and gustatory contrast that makes all the difference.
We recommend using a quality coffee, freshly prepared or from a premium soluble coffee, to ensure a clean flavor without excess bitterness. It is precisely this care applied to the ingredients that turns a simple recipe into a genuine gourmet experience.
Ingredients (6 to 8 people)
For the vanilla base:
- 150 g of soft butter at room temperature
- 150 g of powdered sugar
- 3 eggs
- 1 teaspoon of vanilla extract (or the seeds of a pod)
- 150 g of flour
- 1/2 packet of baking powder
- 1 pinch of salt
- 5 cl of milk
For the coffee base:
- 1 tablespoon of soluble coffee Cafémalin or 5 cl of espresso coffee well brewed
- 1 tablespoon of milk
- 1 tablespoon of unsweetened cocoa powder (optional, to enhance the color)
The necessary equipment
- A cake mold (or 22 cm round mold)
- A salad bowl
- A whisk or electric mixer
- A spatula
- A sieve
- A kitchen scale
Step-by-step preparation
Prepare the cake base
We start by preheating the oven to 170°C (static heat). Butter and flour the mold, or line it with parchment paper for a perfect demoulding.
In a large bowl, work the soft butter with the sugar until you get a creamy and pale texture. Then incorporate the eggs one by one, whisking well between each addition to obtain a homogeneous dough.
Add the vanilla extract, then the milk.
Incorporate the dry ingredients
Sift the flour, baking powder, and salt, then gradually incorporate them into the mixture. Mix gently until you get a smooth batter, without overworking the mixture to preserve the moistness of the cake.
- Separate the batter
Divide the batter into two equal parts in two separate bowls.
In one of the bowls, leave the vanilla batter as is.
In the other, add the coffee (cooled if it's liquid), milk, and possibly cocoa. Mix carefully until you get a well-colored and fragrant batter.
- Create the marbled effect
Alternately pour one spoonful of vanilla batter and then one spoonful of coffee batter into the mold until both preparations are used up. Using a knife or a skewer, delicately draw spiral movements to create the marbled effect without overmixing.
- Baking
Bake for 40 to 45 minutes. Check the cooking by inserting the tip of a knife into the center of the cake: it should come out dry or slightly moist.
Let cool for 10 minutes before unmolding, then let cool completely on a wire rack.

- A quality coffee makes all the difference : avoid coffees that are too bitter or too acidic.
- For an even fluffier cake, replace 20g of butter with whole cream.
- You can add some dark chocolate chips to the coffee batter for an even more indulgent version.
