Ingredients :
(for 1 cup of approximately 250 ml)
- 1 espresso (about 30 ml, freshly prepared)
- 200 ml of fresh whole milk (or vegetable milk type oats or soy)
- Optional: sugar, flavored syrup (vanilla, caramel, hazelnut, etc.)

- Espresso machine (or Italian coffee maker/MOKA)
- Stainless steel pitcher (to foam milk)
- Steam nozzle, electric milk mousseur or manual small whisk
- Latte cup or high cup (around 250 to 300 ml)
Detailed steps:
Preparation of espresso
- Preheat your cup by pouring a little hot water (this will keep your coffee warm longer). Throw the water just before pouring the espresso.
- Prepare a quality espresso (around 30 ml), ideally with an espresso machine adjusted correctly. Otherwise, use an Italian coffee maker.
Preparation of milk foam
- Pour the cold cold milk in the stainless steel pitcher, fill it with 2/3 (do not fill too much to leave on the foam space).
- Use the steam nozzle of your espresso machine or an electric milk froth:
- With steam nozzle:
- Place the nozzle slightly below the surface of the milk.
- Activate the steam by slightly inclining the pitcher to create a soft whirlwind. You should hear a slight whistling noise, indicating that the air is incorporated into the milk.
- When the milk reaches about 60 to 65 ° C (hot but not hot), stop the steam.
- Tap the pitcher against the table to remove large bubbles and turn it gently to homogenize the foam.
- With electric mousseur or manual whisk:
- Heat the milk up to around 60-65 ° C in a saucepan or in the microwave.
- Then immerse your fir or whisk in the hot milk and emulsify until you get a creamy and smooth foam.
- With steam nozzle:

- Gently pour your hot espresso into the cup.
- Lightly tilt the cup then slowly pour the foamed hot milk, first targeting the center of the cup, then bringing the pitcher closer to the surface to finish with a beautiful creamy foam on the top.
